What Exactly is a Parfait? Where Did It Come From?

Did the Parfait Dish come before the parfait? Well, no one really knows for sure, but the word parfait began as a reference to a French frozen dessert in 1894. And these desserts were soon appearing in their familiar tall, clear glasses.

The French parfait was a tasty frozen concoction made with eggs, cream and sugar syrup. The American parfait soon followed and was traditionally very similar to the French one. However, the American version was made with layers of ice cream, cream, and flavored jello and topped with whipped cream and fresh or canned fruit.

As time passed, more and more versions of the parfait have cropped up. Yogurt parfaits with fruit and nuts have produced healthier versions that are delicious without the higher calorie creams or ice creams.

Today, parfait presentations sometimes go beyond extraordinary desserts (like this cheesecake one!) to amazing appetizer creations. Take this one for example, layered with caviar, guacamole, sour cream and tomato. This particular example didn’t even use a traditional parfait glass, but instead opted for a delightful assortment of shot glasses. Oh, and don’t forget the fun breadsticks that you can eat with them.
