Sweetheart Chocolate Cookie Pops

 

It’s almost Valentines Day. Have you tried making cake pops or cookie pops yet? There are some really great recipes out there and I am impressed and intimidated by how creative you can get when you are making these. I, however, am not quite ready to attempt some of the more difficult recipes. I have a love/hate relationship with fondant (if you are a regular reader of this blog, I am referring to the Angry Birds Cake that we made a few months ago – what a fun adventure that was!) and some of the other decorative baking techniques that some of the recipes require. Don’t get me wrong….I want to learn and I will learn. If you are like me, a relative novice, this recipe for Sweetheart Chocolate Cookie Pops is a great way to get started with making pretty treats, and they would be perfect for Valentines Day!

As you can see, the recipe is pretty basic. You will need to pick up some lollipop sticks but the rest of the ingredients you probably have on hand. Come on, give this a try. If I can handle drizzling white chocolate with a fork and putting Valentines sprinkles on top so can you! In fact, the decorating for these cookie pops is easy enough that you can have the kids help. It would be a fun family project and just think, if the results are less than professional bakery perfect it won’t be your fault. I’m just kidding, these really are easy to make and decorate. Stick with me…by the end of the year we will be making cookie pops, cake pops, and other fancy treats that look like they were made by the pros.

 

 

 

What You Need

4 squares BAKER’S Unsweetened Chocolate
3/4 cup butter
2 cups sugar
3  eggs
1 tsp. vanilla
2 cups flour
4 squares BAKER’S White Chocolate
 Assorted Valentine sprinkles

Make It

HEAT oven to 350°F.

MICROWAVE unsweetened chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended. Add sugar; mix well. Blend in eggs and vanilla. Add flour; mix well. Refrigerate 1 hour or until dough is stiff.

SHAPE dough into 30 (2-inch) balls; insert lollipop stick into each ball. Place, 2 inches apart, on baking sheets sprayed with cooking spray.

BAKE 8 min. or just until firm. (Do not over bake.) Let stand on baking sheets 1 min.; transfer to wire racks. Cool completely.

MELT white chocolate as directed on package; drizzle over lollipops. Decorate with sprinkles. Let stand until chocolate is firm.

How to Drizzle Chocolate

Dip fork into melted chocolate, then use to drizzle chocolate over pops.
