Santa Hat Brownies – Adorable Treats You Can Eat!

Oh my goodness!! Are these not the most adorable little Christmas treats you have ever seen? Not only are they too cute for words but they are extremely simple to make.  I have big plans for these little Santa Hat brownies……

How to Make Santa Hat Brownies

Ingredients

1 pan brownies (whatever brand/recipe you want), baked, cooled and cut into round shape

12-16 small strawberries, cleaned and hulled

vanilla-mascarpone buttercream

Mascarpone Buttercream

1/2 cup (1 stick) unsalted butter, room temperature

8 ounces mascarpone cheese, room temperature

2 1/2 to 3 cups powdered sugar

2 teaspoons vanilla extract

pinch of salt

Method:

Beat butter and mascarpone cheese until light and creamy.  Add vanilla extract and salt.  Add 2 1/2 cups of powdered sugar, a half a cup at a time, and continue beating until smooth.  Add more sugar, if needed to reach desired consistency and sweetness.

To Assemble:  Pipe a ring of buttercream frosting on top of each brownie.  Cut off the base of a strawberry so the bottom is flat and place it flat side down on top of each brownie, pushing slightly to secure in place.  Top the tip of the strawberry with a dot of buttercream to finish the santa hat!

These little beauties are going EVERYWHERE with me this Christmas.  My son’s Christmas party at school….I am making these! Finally, something I can make and take to a school party that will make all the other mommies go “oooohhh” and “aaahhhh” (and help me get over the shame I have from usually signing up to send paper products or chips to the parties).

The Christmas party with my husband’s side of the family….I am making these!  Again, something I can take that will help redeem me in the eyes of my sister in law who is a fabulous baker (I love her dearly, but her baking skills leave me in the dust!).

I am so excited to have something so CUTE to make and take to parties (okay,  so I obviously have baking self esteem issues….) that I am literally doing a happy dance.  A happy, happy, happy Christmas dance!

  1. Daisy, what an amazing creation! We have been talking all day long about how these are the cutest darn things we have seen in quite some time! I have a question for you if you don’t mind: I’m dying to try these out myself, but I’m a little intimidated by the mascarpone since I have never worked with it before. Is it pretty easy? I can get it locally, but I was wondering, is there any kind of an available substitution for people who don’t have easy access to it, at their local grocer?
