CARROT CAKE

1 carrot cake mix

1/2 cup orange juice or water

1/2 cup vegetable oil

1 can (8 oz) crushed pineapple in juice, undrained

1 teaspoon orange zest

1 teaspoon vanilla

4 eggs

1/2 cup chopped nuts, optional

1/2 cup coconut, optional

1/2 cup chopped raisins, optional

  1. Heat oven to 325°F. Spray two 8- or 9-inch round cake pans or 13×9-inch pan with Pam.
  2. In large bowl, beat cake mix, orange juice, oil, pineapple, orange peel, vanilla and eggs on low speed 30 seconds then medium speed 2 minutes. Stir in nuts, coconut and raisins. Pour into pans.
  3. Bake 8- or 9-inch rounds approx 30 minutes, 13×9-inch pan approx 35 minutes. Done when a toothpick inserted in center comes out clean.
  4. Remove round cakes from pans to a cake plate and cover with cling wrap until completely cooled. Frost with Cream Cheese Icing.

CREAM CHEESE ICING

2 (8 ounce) packages cream cheese, softened

1/2 cup butter, softened

2 cups sifted confectioners’ sugar

1 teaspoon vanilla extract

  1. Cream together butter and cream cheese until smooth.
  2. Mix in vanilla.
  3. Gradually add powdered sugar until it reaches a good spreadable consistency.
